One of the issue of journal Aramco World, which is published in the USA, includes an extensive article entitled "The fabled flatbread of Uzbekistan", narrating about the art of baking Uzbek national bread.
The publication explains that in Uzbekistan, you can see a rich variety of bread and cakes baking process - it is hard work. In this case, as noted, mainly people, who have acquired special skills transferred to them by inheritance, are engaged in.
— The bread is baked in a 315-degree tandoor oven, in which rounds of dough onto a handheld cushion, leaned back into the oven and slapped each round onto the white-hot walls. Minutes later, baker was pulling out dozens of fragrant, golden, crusty loaves called "non".
The material says that Uzbekistan has a large number of bakeries, and manifold of delicious flatbreads delights everyone.

The article details the process of baking. "The dough for flatbreads is prepaired from the evening. The next day, baker divides it into the same round pieces, rolls them and puts traditional patterns on using chekich. After that, the top of flatbread is sprinkled with sesame, smeared with oil or milk, which after baking gives a golden color".
Along with this, as it is written in the publication, every region of Uzbekistan is famous for its varieties of bread. And each of them - their own sourdough, original cooking technique, unique taste.
It is emphasized that since ancient times bread is the sacred product for the people of our country. However, as reported with admiration in the publication that in Uzbekistan deal with bread production with special care. "It is considered disrespectful to put bread face-down. Moreover, it cannot be allowed crumbs of it to fall to the ground".
